How to check and buy Durian?
- Always choose oval-shaped durians that are green or gray (rather than yellow).
- Peel the stems and look for a bright green skin underneath.
- Check that the spikes are hard.
- The best way to do this is to open the durian to the cook so you can inspect the pulp inside.
- The flesh should be firm and on the dry side.
- And the flesh should feel firm to the touch.
- Durians are most delicious within 48 hours of ripening.
